Thomas Donohoe

Thomas Donohoe, boasting a 30-year journey in the hospitality world—19 of those spent as a chef—has led acclaimed kitchens from New Jersey to Montana, Florida, and New York City. He honed his skills under some of the culinary world’s brightest talents, including Thomas Keller at the French Laundry in Yountville, CA; Jonathan Waxman at Barbuto in NYC; and Bill Pete at Café des Artistes, also in NYC. Throughout his career, Tom has consistently prioritized crafting remarkable dining experiences for his guests.

The Story

Shanghai Jazz opened its doors in the summer of 1995, brought to life by David Niu and Martha Chang. While pursuing her doctoral studies, Martha dove deeply into the cultural history of 1920s Shanghai. During a challenging global period, Shanghai became a sanctuary for individuals fleeing hardships such as America’s depression, rising political turmoil in Eastern Europe, and Australia’s penal settlements. The influx of diverse populations led to a unique culinary fusion, an undercurrent of darker influences, and a flourishing music scene centered around jazz that lit up the city’s nightlife.

Inspired by this era, David and Martha founded Shanghai Jazz. For 22 years and counting, their distinctive concept has been celebrated as one of the “Top 100 Jazz Clubs in the World” (Downbeat Magazine). In the summer of 2017, Thomas Donohoe stepped into their legacy.

Now, Tom and the dedicated Shanghai Jazz team blend culinary and hospitality expertise, all with a shared goal: to connect great people through live music, delicious cuisine, and warm service, creating unforgettable dining experiences.
